LSU AgCenter FOODii and the School of Nutrition and Food Sciences, in collaboration with the School of Animal Sciences' Meat Laboratory, recently welcomed participants to Mastering Beef Wellington: A Food Science Experience, part of the ongoing Unlocking the Secrets of Food Science educational series. The workshop combined culinary techniques with food science education, giving attendees an interactive opportunity to explore the principles behind one of the world's most recognized dishes.
Throughout the evening, participants learned how each component of Beef Wellington contributes to the final product. Discussions focused on the role of beef tenderloin, mushroom duxelles, mustard, prosciutto, puff pastry, and egg wash, highlighting how ingredient selection and preparation impact flavor, texture, structure, and moisture control.
The workshop emphasized the science that occurs during cooking. Attendees explored how puff pastry rises through steam generation, why moisture reduction is essential when preparing mushroom duxelles, and how the Maillard reaction creates the rich flavors, aromas, and browning associated with roasted foods. These concepts helped participants better understand the connection between food science and successful cooking outcomes.
Participants also examined meat science concepts, including the role of myoglobin in beef color and the changes that occur as meat is heated. Instructors discussed why color alone cannot determine doneness or safety and demonstrated the importance of using a food thermometer to verify proper internal temperatures. Food safety practices, including safe handling of raw ingredients, preventing cross-contamination, and proper storage of leftovers, were incorporated throughout the session.

During the hands-on portion of the workshop, attendees followed the four key phases of Beef Wellington preparation: searing the beef, preparing the mushroom duxelles, wrapping and chilling the Wellington, and finally baking and resting the finished product. Each stage was paired with explanations of the scientific principles that influence the final quality of the dish.
The event reflected the mission of the Unlocking the Secrets of Food Science series by transforming everyday cooking experiences into engaging learning opportunities. By combining practical culinary skills with research-based food science concepts, the workshop helped participants gain a deeper appreciation for the role science plays in the foods they prepare and enjoy.
The Mastering Beef Wellington workshop is one of several educational experiences offered through LSU AgCenter FOODii and the School of Nutrition and Food Sciences, providing community members with opportunities to explore the science behind food in an interactive and approachable environment.
