Assortment of smoked meats and sausages arranged on a wooden cutting board with fresh herbs. The LSU AgCenter Food Innovation Institute (FOODii) explored an expansion to support Louisiana meat and poultry entrepreneurs through enhanced processing resources, technical assistance, and regulatory guidance. The initiative was evaluated through a USDA Agricultural Marketing Service Local Food Promotion Program (LFPP) planning grant.

The feasibility study found strong demand for commercial processing space, refrigerated and frozen storage, HACCP and food safety support, regulatory compliance assistance, product development services, and labeling and testing resources. Entrepreneurs identified limited access to inspected facilities and specialized equipment as significant barriers to growth.

Since 2013, FOODii has supported food businesses and helped launch over 175 products, but its current services focus primarily on FDA- and Louisiana Department of Health-regulated products. The proposed expansion would extend support to businesses regulated by the Louisiana Department of Agriculture and Forestry (LDAF) and USDA Food Safety and Inspection Service (USDA-FSIS).

The potential expansion, pending funding, aims to strengthen Louisiana’s local food system, create new opportunities for agricultural producers, and increase access to value-added meat and poultry processing services statewide.
